Roasted Beet Hummus

Ingredients

  • 3 - beet (2" dia), Beets, raw Roasted

  • 1 - cup , Chick Peas (Garbanzo Beans), Canned, Low Sodium

  • 1/4 - Cup, Seeds, sesame butter, tahini, type of kernels unspecified

  • 1 - lemon yields, Lemon juice, raw

  • 2 - clove, Garlic, raw Minced

  • 1/8 - oz, Spices, Cumin, Ground

  • 1 - tsp , Salt, Kosher

  • 2 - tbsp , Oil, Olive

Method

  1. To roast beets, cut stems and clean them, wrap them in foil and roast at 350 degrees for about 1 hr and 20 mins. The longer they cook, the easier they are to peel and chop.

  1. Place all ingredients except olive oil into a food processor and puree.

  1. Last gradually puree the olive oil into the mixture.
