Summer Pasta Salad

Ingredients

  • 2 Cups pasta shells (usually < 1 lb)

  • 2 Cups carrots, chopped

  • 2 Cups cucumber, quartered slices

  • 1 medium onion, chopped, yellow/vidalia/sweet

Sauce:

  • 1.5 Cups mayonnaise or miracle whip

  • 1/3 Cup white vinegar

  • 1 Cup white sugar

  • 1 tsp salt

  • 1/4 tsp ground pepper

Method

  1. Cook pasta in boiling water to al dente. Drain and rinse to cool, then set aside.

  1. While pasta cooks, cut the veggies, then whisk together the sauce ingredients in a medium bowl.

  1. Gently combine the pasta, veggies, and sauce in a large serving bowl.

  1. Cover salad and let it set in refrigerator before serving.
