Summer Pasta Salad

Ingredients

2 Cups pasta shells (usually < 1 lb)

2 Cups carrots, chopped

2 Cups cucumber, quartered slices

1 medium onion, chopped, yellow/vidalia/sweet
Sauce:

1.5 Cups mayonnaise or miracle whip

1/3 Cup white vinegar

1 Cup white sugar

1 tsp salt

1/4 tsp ground pepper
Method
- Cook pasta in boiling water to al dente. Drain and rinse to cool, then set aside.
- While pasta cooks, cut the veggies, then whisk together the sauce ingredients in a medium bowl.
- Gently combine the pasta, veggies, and sauce in a large serving bowl.
- Cover salad and let it set in refrigerator before serving.
