Salmon Poke Bowl
Ingredients
Poke:

10oz Sushi grade salmon

1/2 english cucumber diced

1 small shallot sliced
-
1 ripe avocado diced
-
2-3 radishes sliced thinly
Marinade:

3 tablespoons soy sauce
-
1 1/2 tablespoons mirin
-
1 teaspoon toasted sesame oil
-
Juice of 1/2 meyer lemon
Toppings:
-
2-3 green onions diced
-
1 teaspoon red tobiko
-
1 tablespoon toasted nori sliced
Method
- Combine cucumber, shallot, and salmon in a bowl. In another bowl, whisk together soy sauce, mirin, sesame oil and lemon juice. Combine and refrigerate for 20 minutes or up to an hour. Slice radishes and avocado and set aside.
- Once the fish has marinaded add the avocado and radishes and serve over rice or a small salad.
- Top with green onion, tobiko, and toasted nori.
