Salmon Poke Bowl

Ingredients

Poke:

  • 10oz Sushi grade salmon

  • 1/2 english cucumber diced

  • 1 small shallot sliced

  • 1 ripe avocado diced

  • 2-3 radishes sliced thinly

Marinade:

  • 3 tablespoons soy sauce

  • 1 1/2 tablespoons mirin

  • 1 teaspoon toasted sesame oil

  • Juice of 1/2 meyer lemon

Toppings:

  • 2-3 green onions diced

  • 1 teaspoon red tobiko

  • 1 tablespoon toasted nori sliced

Method

  1. Combine cucumber, shallot, and salmon in a bowl. In another bowl, whisk together soy sauce, mirin, sesame oil and lemon juice. Combine and refrigerate for 20 minutes or up to an hour. Slice radishes and avocado and set aside.

  1. Once the fish has marinaded add the avocado and radishes and serve over rice or a small salad.

  1. Top with green onion, tobiko, and toasted nori.
