Chicken Salad

Ingredients

  • 2 cups leftover rotisserie chicken, chopped

  • 1/2 cup diced red onion

  • 1/2 cup chopped celery, or diced apple

  • 1/2 cup red grapes, halved

  • 1/4 cup dried cranberries

  • 1/4 cup chopped or slivered nuts (I prefer pecans)

  • 1/2 cup mayonnaise (or plain greek yogurt)

  • 1 tablespoon freshly squeezed lemon juice, or more, to taste

  • 1 tablespoon dijon mustard

  • Kosher salt and freshly ground black pepper

Method

  1. Combine all ingredients into a large bowl.
