Ingredients

  • 1 1/2 oz gin

  • 3/4 oz fresh squeezed lemon juice

  • 1/2 oz rhubarb syrup

  • Chilled Champagne or Cava to top

Method

  1. Combine all but the Champagne in a cocktail shaker filled with ice. Shake hard for 5 seconds.

  1. Pour into a Champagne flute and top with chilled Champagne to taste.

  1. Garnish with rhubarb ribbons or a lemon twist.
